How to Eat Healthier as a Family

Molly's Spiced Chicken Quesadillas
Ingredients:
1 tbsp olive oil
1 ½ pounds boneless, skinless chicken breasts, cut into ½-inch strips
1 small red onion, diced
½ tsp cumin
½ tsp salt
½ tsp cinnamon
½ tsp chili powder
2 cups shredded Monterey Jack or Cheddar cheese
10 small soft tortillas
2 cups of baby arugula or spinach
Instructions:
Spray a large skillet with nonstick cooking spray. Add oil and heat over medium. Add the chicken and onions and sauté until chicken is no longer pink (about 5 minutes). Add the spices and cook for two more minutes. Remove from heat.
Heat a large nonstick skillet over medium heat. Spread a handful of cheese on half of each tortilla and top it with a layer of arugula or spinach and chicken. Fold the tortillas and cook them on each side until they are golden brown. You should be able to cook 2 or 3 quesadillas at a time, depending on the size of your skillet.
Slice each quesadilla in half and serve.
